Fast Casual Favorite Carrot Express Expands to Sunset Harbour

Carrot Express, Miami’s beloved healthy dining establishment, is opening its latest location in the vibrant Sunset Harbour neighborhood of Miami Beach. Known for its commitment to nutritious yet delicious cuisine, the popular fast-casual eatery continues to expand, with Sunset Harbour marking its 28th outpost between South Florida and New York. By the end of 2024, the company plans to reach 30 locations, including a new site in Manhattan’s Brookfield Place.

Owner Mario Laufer founded Carrot Express in 1993 with the mission of offering health-conscious dining options in Miami Beach. From humble beginnings inside a gas station on Alton Road, the brand has become a staple for locals and visitors seeking wholesome meals without sacrificing flavor or convenience. Laufer reflects on the brand’s evolution, saying, “It’s a surreal moment to reopen within blocks of where it all started. We’re honored to be a part of this community.”

The new 1,571-square-foot Sunset Harbour location features a modern, bohemian design with earthy tones and ample greenery. Guests can choose from a communal counter, cozy booths, or shaded outdoor seating with bright orange umbrellas. Positioned near luxury shops, skincare boutiques, and fitness studios, the space is perfect for a pre- or post-workout meal or a relaxing coffee break.

Carrot Express will offer all-day breakfast, with menu highlights such as Jessie’s Breakfast Bowl, a hearty combination of quinoa, mushrooms, kale, turkey bacon, and roasted tomatoes, topped with a cage-free egg and avocado, and the Gluten-Free Carrot Waffle, served with fresh fruit and maple syrup. The curated coffee and matcha program, starting at 7 a.m. daily, will feature artisanal brews from Imperial Moto, a local roaster known for toxin-free coffee.

Guests can also enjoy Carrot Express’s signature offerings, including fresh salads, grain bowls, wraps, and vegan and gluten-free options. The menu has recently expanded to include cold-pressed juices and baked goods, such as vegan banana bread and sugar-free cheesecake. Carrot Express Sunset Harbour, located at 1828 Bay Road, will be open from 7 a.m. to 9 p.m. daily for dine-in, takeout, and delivery.
